Bally's revamped sterling brunch lives up to its bubbly reputation


Vegas’ long-standing iconic Sterling Brunch lives on with a few contemporary twists. Appropriately holding court at Bally’s—the classic Strip-center hotel also known for its other institution, showgirl revue “Jubilee”—Sterling Brunch is an over-the-top Las Vegas buffet experience.


A HISTORICAL FEAST RETURNS

Having lived on in its home at Bally’s Steakhouse for more than 30 years, the Las Vegas buffet brunch was temporarily closed as the space transitioned into BLT Steak. This hip, contemporary steakhouse with outposts in hot spots around the country has introduced its Gruyere popovers and premium cuts to Bally’s, yet left many wondering if Sterling Brunch would go by the wayside in the change over. No need to fear, fellow brunchers, Sterling is alive and well. The splurge-worthy, $90 per person meal ($85 with a Total Rewards card) has even been extended to Saturdays as well as Sundays and a few new menu items have been added.


KEEPING ’EM COMING

Sterling Brunch was heralded for its bottomless pours of Perrier-Jouët Champagne and unlimited American Sturgeon Caviar. These two staples kept new and regular Las Vegas visitors booking their reservations year after year, and that still remains today. Your glass is immediately filled with bubbly upon arrival, and BLT Steak’s famous giant popovers are whisked to your table. I dug in like I’d never eaten before but halfway through the heavenly bread I realized I better slow down—I had a lot of dishes to get through.


THE GOURMET BUFFET

As if the champagne, caviar and bread weren’t reasons enough to make a reservation, the buffet line area lets you pile your plate high with Alaskan King crab legs, lobster tail, chilled jumbo shrimp, grilled filet mignon, oysters and rack of lamb chimchurri. Its custom omelet station was a convenient addition since I was in the mood for eggs with vegetables that day, but you can also get its famous lobster, cognac and Boursin cheese omelet selection made to order. Highlights I found at the buffet were the super-creamy truffled mashed potatoes, prime rib, creamed spinach, herb crusted Chilean sea bass, the rich banana bread pudding French toast, roasted asparagus and flavorful tomato-mozzarella cups. The small portions of the dishes were just enough to get a taste of everything without it being too overwhelming.


WOULD YOU LIKE CAVIAR WITH THAT?

Several other food selections, including the scrumptious caviar, can be ordered via wait staff, such as lobster bisque, Eggs Benedict and tuna tartare. I tried both the Caesar salad and the chopped vegetable salad BLT Steak is known for, so I could at least sneak some more vegetables into my meal instead of carb-loading. (Though I admit, the Belgium waffle was also to die for, with a decadent vanilla bean whipped cream topping.)

After thoroughly stuffing myself, I suddenly found a second stomach when I saw the dessert presentation. I snagged an array of the sweets samplings, ranging from chocolate truffles on a stick to fruit tarts and giant chocolate-covered strawberries. And just when I thought Sterling Brunch had delightedly defeated me on this lazy Sunday afternoon, my waitress stopped by again. Another refill of champagne? Yes, please!
